MEAT

Grilling Kindle a fire and let the flames die down. Place a wire grill over the coals. Lay the meat on the grill and adjust it to hold the meat close enough to the coals for moderate cooking. Grill hamburgers 3 to 4 min- utes on each side. A 1-inch-thick steak needs about 8 to 10 minutes on each side. Cut into the center and be sure the meat is fully cooked.

Frying
Heat a spoonful of cooking oil in a fry pan. Ease in hamburger patties, pork chops, or steak, and cook over coals or a stove. Be sure that the meat is fully cooked. Pork must always be very well done.

Stew
For one serving use quarter-pound of beef cut into three-quarter-inch cubes. Rub flour into them and fry until brown in a pot with a few spoonfuls of cooking oil. Add enough water to cover the meat, put a lid on the pot, and simmer for 30 minutes. Add a chopped onion, carrot, and potato, and simmer 30 minutes more. Season with salt and pepper.

CHICKEN
Frying Roll chicken pieces in flour. Fry in a few tablespoons of cooking oil until golden brown. Slowly add half a cup of water, cover with a lid, and steam over low heat for about 20 minutes.

Broiling
Lay pieces of chicken on a wire grill. Cook over coals for 15 minutes on each side. Keep the chicken moist as it broils by brushing it with butter, margarine, or barbecue sauce.
