FISH
When you've had some luck with your fishing pole, there are plenty of ways to turn your catch into dinner. First, clean each fish by slitting open the belly and pulling out the guts. If you want to remove the scales, scrape the skin with a knife from the tail toward the head. Burn the entrails or carry them home in a trash bag. Rinse the fish with water inside and out.
Frying
Roll each piece of fish in flour or cornmeal. Fry in a few spoonfuls of cooking oil until golden brown, turning the fish once. It won't take long.
Poaching
Drop fish into salted, boiling water. Simmer gently until the flesh can be picked from the bones.
